Flatbread Pizzas

Ingredients

  • 4 wholemeal flatbreads/pitta breads halved/sandwich thins halved (available in the bread aisle at most supermarkets)
  • 80g grated cheese (cheddar or mozzarella)
  • 4 teaspoons of tomato puree 
  • Optional other toppings - sweetcorn, olives, mushrooms, ham, peppers, onions, cherry tomatoes chopped (could use same toppings as for Omelette Muffin and buy at same time)
  • Chopped herbs (dried or fresh)

Recipe

  • Preheat oven to 180 degrees.
  • Spread 1 teaspoon of tomato puree over one side of each flatbread.
  • Chop up additional toppings so small chunks or slices.
  • Sprinkle with grated cheese and then add any optional other toppings as suggested above.
  • Sprinkle with dried herbs.
  • Place on a baking tray and bake for 8-10 minutes in the oven. 
  • Leave to cool for 5 mins and then cut in half or quarters to serve. 
  • Can be served hot or cooled.
