Omelette Muffins

Ingredients

  • 4 eggs
  • 60ml milk
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of oil
  • Salt and pepper to season
  • Grated cheddar cheese
  • Favourite omlette fillings:
  • Spring onions, Peppers, Olives, Mushrooms, sweetcorn

Recipe

  1. Preheat oven to 190 degrees celcius.
  2. Chop filling ingredients into very small chunks/pieces (diced) and mix them up in a bowl.
  3. Grease a muffin tin (or you can use cake cases in a muffin tin).
  4. Put chopped ingredients into each muffin case to about half full and sprinkle grated cheese on top. 
  5. Mix egg, milk, baking powder, oil, salt and pepper in a bowl.
  6. Pour egg mixture in each muffin cup. You should fill to 3/5 of the way to the top.
  7. Put in oven and bake for 20-25 minutes.
  8. Take out of oven and let rest for 5 minutes before serving.
  9. Can be eaten warm or cold. 
  10. Great as a savoury snack or for lunch with salad and wholemeal pitta bread/toast.
  11. Children like the idea of a savoury muffin and great way to encourage them to eat eggs. And they can prepare it all themselves!
